Pumpkin Chocolate Chip Macaron Recipe

Perfect for Halloween, these yummy Pumpkin Chocolate Chip Macarons are a fun treat to share!

Macaron Shell Ingredients:

  • Basic Macaron Recipe ingredients

      • 3 Large Eggs, room temp (100g)

      • 1 1/2 C. Almond Flour (140g)

      • ~1/2 C. Granulated Sugar (90g)

      • 1 C. Powdered Sugar (130g)

      • 1 Tsp. Vanilla (5mL)

      • 1/4 Tsp. Cream of Tartar (800mg)

  • Orange Food Coloring

Pumpkin Spice Buttercream Ingredients:

  • 1/4 C. Butter, room temperature

  • 4 Tbsp Pumpkin Puree

  • ~2-3 C. Powdered Sugar

  • 1/4 Tsp. Salt

  • 1 Tsp Vanilla

  • 1 Tsp Pumpkin Pie spice

  • 1 Tbsp Whipping Cream or Half&Half

  • Orange Food Coloring

SemiSweet Chocolate Ganache Ingredients:

  • 4 oz SemiSweet Chocolate Chips

  • 2 Tbsp Unsalted Butter

  • 2 Tbsp Heavy Cream

  • 1 Tsp Vanilla Extract

  • Pinch of Salt

Macaron Shell Recipe Steps

Follow directions for the Basic Macaron Recipe, with this modification:

  • Add Orange Food Coloring to the mixture when adding granulated sugar

Pumpkin Spice Buttercream Recipe Steps

  • Cream Butter for 1 minute.

  • Add all other ingredients except food coloring (start with 2 cups Powdered Sugar). Beat slowly until combined.

  • Add Orange Food Coloring to desired shade

  • Beat 4-6 minutes on high until fluffy and smooth

  • Add more Powdered Sugar if frosting is not stiff enough, and beat until fluffy

  • Refrigerate if needed, for 30 minutes to help frosting solidify further

  • Spoon frosting mixture into a piping bag with a medium round piping tip

  • Pipe frosting onto bottom of Macaron Shell, leaving space in the center to add the SemiSweet Ganache

SemiSweet Chocolate Chip Ganache Recipe Steps

  • Bring Cream and Butter just to a boil. Remove from heat (or microwave in microwave-safe bowl for ~1.5-2 minutes)

  • Pour mixture over top of SemiSweet Chocolate Chips

  • DO NOT STIR

  • Cover for 2 minutes (to keep in the heat), allowing Cream mixture to melt Chocolate

  • After 2-3 minutes of allowing Cream mixture to melt Chocolate Chips, mix Chocolate and Cream mixture

  • Add in Vanilla and Salt

  • Set in Fridge to thicken and cool ~30 minutes

  • Spoon ganache into a piping bag

  • Pipe Ganache into center of Pumpkin Spice Buttercream on bottom Macaron Shell

  • Add top Macaron Shell

  • Pipe "pumpkin stem" on top Macaron shell
