Homemade Marshmallows are such a cute treat to share and melt so much better than commercial marshmallows, especially in a cup of hot chocolate!
Ingredients:
1/2 cup Water
6 packets Unflavored Gelatin (~7 tsp)
1 3/4 cup Granulated Sugar
1/4 cup Corn Syrup
1/2 cup Water
Pinch of Salt
2 tsp Vanilla Extract
1 tsp Almond Extract
Powdered Sugar (for coating final marshmallows)
Recipe Steps
Mix 6 packets of Gelatin and 1/c cup of Water into mixing bowl. Allow to sit for ~10 minutes
Separately in saucepan, mix 1 3/4 cups of Granulated Sugar, 1/4 cup Corn Syrup, and 1/2 cup of Water. Bring to boil, stirring occasionally, until mixture gets to 245 degrees Fahrenheit. Remove from heat.
Start mixing Gelatin mixture and add cooked sugar mixture in slowly. Add pinch of Salt.
Continue mixing until the mixture has grown 2x-3x in size, is no longer translucent, and is stringing from the side of the bowl like marshmallow
Add 2 tsp Vanilla extract and 1 tsp Almond extract. Mix together.
Pour marshmallow into a heavily-greased pan (you DON'T want the Marshmallow sticking!) and allow to set for 3-6 hours.
Cut into squares. Cover marshmallows in Powdered Sugar (I like to put the powdered sugar into a gallon-size ziploc and shake it all up to coat all sides). Marshmallows will keep a few weeks if kept in closed container/bag.
